You are getting a new growth on your dendrobium. Spikes will grow from the top of the new cane. Very pretty dendrobium by the way.

Will it help the plant to grow better if i am to remove/cut off these leaves that aren't in the healthy green colour?

It would be better to leave the leaves on for although they may not be in good condition they are still producing energy for the plant.

When i bought this plant it is potted in an empty shell of a rather large snail with coconut husk as potting mix. Should i re-pot it? The plant seems to be doing well as it is for now

As long as there is drainage, it should be fine.
