This one is a breeze and delicious.
1 lb spareribs (have butcher cut them into thirds)
1 Tbl sherry
2 Tbl sugar
3 Tbl vinegar
4 Tbl soy sauce
5 Tbl water
Mix the ingredients into a pot and bring to simmer, cover and allow to cook about 45 minutes. Remove cover and bring heat to high. While stirring constantly reduce liquid until it just starts to carmelize. Serve immediately.
