Default Scallops & Tortellini in Pesto Sauce

This is one of Mr Hicks' favorite dinners, Enjoy.
1 Lb Bay or Sea Scallops
1 Med onion sliced thinly
1 Lb Fresh Asparagus or Broccoli cut in bite size pieces.
1/4-1/3 C Calamata Olives pitted and halved
1/2 C Pesto
1 Pkg fresh Tortellini(any flavor) cooked and drained-Save 1/2 C cooking liquid

Over Med heat in a large skillet Saute onions to translucent in olive oil add asparagus and saute till bright green.
Add the Scallops and cook 3-4 min Add the pasta, olives and the pesto tossing to coat add some of the cooking liquid if necessary and heat through. If you forget and don't save the cooking liquid White wine can be substituted. Top with some parmesean cheese and serve.

ANYTHING scallops is good! This one sounds so easy, too. Cin, you should post your catfish piccata recipe, that one is so tastey and so easy to make!

OH MY this one is awesome. We had it last night with cheese stuffed tortilini. A chill salad and woohoo. What a feast! Thanks, Cin and Mr Hicks!
