Default Blasting Powder

Blasting Powder
aka 'polvo del diablo'

this is a chili powder that i put on just about anything. a little goes a LONG WAY!
and yes, it is delicious on chocolate ice cream.

(all dried)
16 de arbol chilies
8 chipotle chilies (smoke dried jalapeńo)
4 Ancho Chilies
4 habanero chilies
2 tbsp fresh ground black pepper
2 tsp kosher salt

CAUTION! use rubber gloves when handling the chilies

preheat oven to 200(f)

stem all the chilies but do not remove the seeds
cut chilies into thin strips and lay them onto a sheet pan
roast in oven 'til good and crispy (20 min to 1 hour, depending on how dry they started out)

CAUTION!
do not burn them! Chili smoke can be as bad as pepper spray.


throw everything into a spice mill (i have a coffee grinder that i use only for spices) you will have to work in batches.
grind 'til you have fine powder (some seeds will remain)

CAUTION!
wait a minute or so after grinding before opening the grinder, the airborn dust is as bad as the smoke


once everything is ground, CAREFULLY sift through a fine wire mesh.

store in airtight container, mixture will keep it's intensity for up to 6 months.

sorry for all the cautionary notes, but i've learned these lessons THE HARD WAY
