they look like papilionanthe trees or papilionanthe hookeriana. For all purpose, you can consider and provide a vanda culture. You can pot them in fast draining bark mix and grow it outside and they love a lot of sun. I have seen it growing directly on the ground and they grow really tall.

These are terete leaved Papilionanthe and were once called Vanda. Can't see the flowers clearly in your picture, so can't ID it positively. I wouldn't be surprised if they turn out to be Papilionanthe (V) Miss Joaquim the national flower of Singapore. You can grow them in pots in charcoal chunks or any medium at all or simply tie them to stakes planted into the ground. 3 foot stakes should be OK - they normally bloom when they grow above the stakes, so the taller the stakes the taller they'll grow before they bloom. Yes you can top-cut them and about 18 inches is a good length. Oh yes, we grow them in full sun.

Lucky you,. You are literally in Orchid Heaven, the last frontier of wild orchids, home to still many undiscovered species and that most famous of Dendrobiums ,Den lasianthera. I really envy you.
