Description: This type of chopped salad is often served for breakfast in Mediterranean countries. I find that I like it because its very cooling, and has a great crunch...and the watermelon adds a sweetness that is very satisfying. I found this recipe originally at epicurious.com and modified it to my liking to make it more user friendly :-)
Preparation:
3 plum tomatoes, chopped, drained
1/4 of a watermelon, chopped
1 green bell pepper, chopped
1 Tbsp olive oil
8 oz. Feta cheese, broken into small cubes or crumbled
1 8oz container non-fat greek yogurt
1 Tsp dried oregano
Instructions:
Add the chopped tomato, watermelon, and bell pepper into a mixing bowl with olive oil and 1/2 of the feta cheese (4 oz)
Put the greek yogurt, other 4 oz of feta cheese and oregano into the blender and blend lightly until it is blended, but not enough to make it too liquidy
Pour this sauce from blender over veggie/watermelon mixture and toss.
This sounds just wonderful. After reading this, I had to go and snack on some feta cheese. I also posted up my Greek Salad recipe.
I have never tried watermelon inside a non-fruit salad before. I bet it is great!
