Description:
Zaalouk is a salad made of eggplant. It is a beautiful dish and tasty too!

(I got this recipe from an Egyptian Cooking Book and modified to my liking)
Other: Ingredients:
Time:
15 prep and 30-45 minutes cooking
Difficulty:
Easy
Serving Size:
Serves 4 - 6
  1. 2 lbs. Fresh Eggplant
  2. 8 oz of Really Ripe Tomatoes
  3. 1 lemon
  4. 3 cloves of garlic
  5. 1 fresh hot red pepper
  6. 1 small can/ jar of black olives
  7. Olive Oil
  8. paprika
Preparation:
  1. Wash the eggplants and remove their stems.
  2. Cook them at 325 for about 45 minutes.
  3. Remove them from oven and let them cool.
  4. Peel and cut them into bite-size chunks.
  5. Cut tomatoes into chunks
  6. Chop red pepper into small bits (remove seed if you don't like your food spicy hot - I leave them in!)
  7. Slice 1/2 of your lemon into thin, decorative slices
Instructions:
  1. Slowly cook the eggplant in a skillet with 4 tablespoons of olive oil.
  2. Add in chunk tomatoes with a pinch of salt. Stir.
  3. Next add 1 teaspoon paprika and the crushed garlic.
  4. Finally add in the chopped red pepper.
  5. Cook for about 30 minutes.
  6. Stir and sprinkle with the juice of half of the lemon.
  7. Serve the Zaalouk lukewarm or cold. ( I like it both ways)
  8. Before serving garnish with black olives and lemon slices

droooool...I love eggplant and Middle Eastern dishes...I will definitely try this one!...thanks

Edit...thanks...I am hungry and just had to call in a dinner order..no middle eastern around but just ordered eggplant with garlic sauce from the Chinese take out, LOL.
