Spanish Rice

Description: Spanish Rice
This recipe can be made spicy by substituting chili pepper in place of the bell pepper.

Ingredients: |

Time:
about 30 - 35 Mins.
Difficulty:
Easy
Serving Size:
2-4 people
|
- 3 Tbs. Butter
- 1/2 C. Chopped Onions
- 1 Pt. or 1 can of tomatoes. Cut into small cubes.
- 1 C. Uncooked Rice
- 1/4 C. Chopped Green Bell Pepper (sub chili pepper (1 sm. can) for spicy dish)
- 2 1/2 cups of Hot Water
- 2 Tsp. Salt

| Preparation: |
- Chop onion, pepper, and tomatoes into small cubes.
|
| Instructions: |
- In a large skillet, melt the butter.
- Add in the rice, onions, and green peppers stirring over medium heat until brown.
- Add in remaining ingredients.
- Heat to boiling then reduce heat.
- Cover and simmer about 30 minutes, stirring occasionally, until rice is tender.

Add some shredded left over chicken and it can be made into a main course...yum

Let me know how it turns out, Ron! We rarely see eggplants in the stores here. My dad has planted some in his garden in Texas though. I don't kow how they will turn out or even if they have produced yet.
