Description:
Garden Vegetable Soup Use your garden veggies to make a great soup. You can freeze it to enjoy in the winter too!
Source: Light Cooking for Two - edited to the way we make the soup

Serving Size:
8 adults
  1. 2 quarts Beef Broth (no-salt added)
  2. 3 cups cubed fresh tomatos
  3. 2 cups cubed potatos
  4. 2 cups chopped cabbage
  5. 1 cup (frozen) whole-kernal corn
  6. 1/2 cup chopped carrots
  7. 1/2 cup chopped fresh green onion
  8. 1/2 cup chopped zucchini
  9. 1/2 cup chopped fresh green beans
  10. 1 teaspoon salt
  11. 1 teaspoon dried Italian seasoning1/2 teaspoon pepper
  12. 1/2 teaspoon hot sauce (use 1 teaspoon for spicier soup)
  13. 1 6oz can of tomato paste
  14. 1 bay leaf
Preparation:
  1. Wash and prepare vegetables.
  2. Chop veggies and set aside to add to broth when ready.
Instructions:
  1. Place broth in a large saucepan and bring to boil.
  2. Add tomatos and remaining ingredients.
  3. Reduce heat, and simmer, uncovered for one hour stirring occasionally.
  4. Before serving, pick out and remove bay leaf.
  5. This recipe makes 3 quarts of vegetable soup.
