    Default Tom Ka Soup

    Description: A great tasting, quick and easy soup!

    Note: To make Tom Yam instead, subsitute more chicken broth to replace coconut milk.
    Serving Size: 4-6 servings
    Time: 30 minutes
    Difficulty: Easy

    Ingredients:
    1. 4 tbs fish sauce
    2. 12 oz can coconut milk
    3. 2 cups broth (chicken or vegetable)
    4. 2 cups water
    5. 2 sprigs lemon grass
    6. 1 lime leaf (optional)
    7. 1 lime, juice of
    8. 4+ garlic cloves, chopped
    9. 1 8 oz package firm tofu (can use whole lb)
    10. 1/2 cup + shrimp
    11. 1/2 cup mushrooms (used dried morels!!)
    12. 1 tsp + red chili paste
    13. 1 tbs+ grated fresh ginger root
    14. 1/4 cup chopped cilantro
    15. 1/4 cup Thai Basil
    Preparation:
    1. Soak mushrooms if using dried to rehydrate so you can roughly chop them, wash and take the tails off the shrimp. Chop garlic, cilantro and basil.
    Instructions:
    1. Throw everything in a pot and simmer for about 10 minutes.
    2. Add the shrimp and boil for 2-3 additional minutes.
    3. Garnish and serve!
