    Default Broccoli Salad

    Description: This recipe has made the rounds, and is not my own creation, but we've all made our own little changes to it. I tend to use red onion, and red grapes, because I love the color contrasts, but any type you like would do. I also love it with dried cranberries in place of the raisins.

    If you're a weight watcher, this is only about 3 points for 1/2 cup, and worth every mouthful.
    Serving Size: approx. 6 servings
    Difficulty: Easy

    Ingredients:
    1. 3 strips bacon- chopped and fried and drained
    2. 0.5 pound broccoli-chopped
    3. 0.5 cup celery- diced
    4. 1 cup green or red seedless grapes-sliced in 1/2
    5. 0.5 med onion- I use sweet salad onion or red onion
    6. 0.5 cup raisins or dried cranberries
    7. 0.5 cup sunflower seeds

    8. Dressing:

    9. 0.5 cup fat-free mayonnaise
    10. 1 tbs sugar
    11. 1.5 tbs vinegar
    Preparation:
    1. Cut the vegetables into bite sized pieces.
    2. I buy the pre-cut broccoli florets at the market, and just cut them even smaller.

    3. Fry the bacon and let it cool. I do the bacon in the microwave to save time (and a greasy pan).
    Instructions:
    1. Combine all salad ingredients and mix and pour dressing over all. Mix well

    2. I've found that this is better if it sets for at least 4 hours or overnight to let the flavors develop
