Frozen Lemon Cream

    Default Frozen Lemon Cream

    Description: I grew up in the NYC area. Italian, lemon ice was a staple of my childhood. I still love it but it is a pain to make. Found this recipe...YUMMM...the taste brings be back to Sorrento Italy.
    Serving Size: 4 cups
    Time: 15 mn plus time to freeze
    Difficulty: Easy

    Ingredients:
    1. 2 cups heavy cream
    2. 3/4 cup sugar
    3. 1/2 cup fresh lemon juice
    4. grated lemon rind for garnish (optional)
    Preparation:
    1. squeeze fresh lemons to make 1/2 cup juice. About 3 lemons. (use room temp lemons, roll firmly on counter top before squeezing. Sometimes I pop them into microwave for 30 seconds each before rolling them on counter top)
    Instructions:
    1. Pour heavy cream into bowl and whip on medium speed.
    2. Gradually add the sugar and then the lemon juice.
    3. When the cream forms soft peaks transfer into a clean bowl or individual serving dishes. Cover with plastic wrap and freeze until firm.
    4. Garnish with grated lemon rind and serve.

    Ooh and here I am trying to keep the weight off. Anything lemony and creamy and my willpower disappears.

    Those sound delicious and easy to make, like lemon ice cream without the hassle of having to have an ice cream maker ( which I dont have)

    I also do something similar with chocolate mousse and freeze it.

    oh well...we go through life once...my philosophy is : it is the things that we do on a regular basis that causes problems. Having a sweet treat once-in-awhile just nourishes the soul and not the body

    Sound delicious yet sinful. My lemon granita doesn't have any of the cream but probably twice the sugar. I'll give your recipe a try!

    This sounds like it would be yummy in a store bought graham cracker pie crust too........... or maybe oreo cookie?
