    Default ZUCCHINI CRUSTED PIZZA

    Description: This time of the year there is more zucchini that I know what to do with. This is a great recipe that I have been using this recipe for 25 years.

    Might want to consider making a couple of pans of crust and save one for later in the week.
    Serving Size: 4-6
    Time: about an hour
    Difficulty: Easy

    Ingredients:
    1. 3 1/2 c. grated zucchini (grated coarsely)
    2. 3 eggs, beaten
    3. 1/2 c. grated Mozzarella cheese
    4. 1 tbsp. fresh basil, minced or 1/2 tsp. dried
    5. 1/3 c. flour
    6. 1/2 c. Parmesan cheese
    7. Favorite pizza toppings.
    Preparation:
    1. I grate the zucchini with an electric grater but it also goes fairly fast using a hand grater. I then salt grated zucchini in a colander, let it sit salted for 15 min to let the juices run out. I rinse lightly and squeeze the water out of it before measuring it.
    Instructions:
    1. mix all the ingredients together, except for toppings
    2. spread onto a greased baking sheet (9x13) and bake 20 - 25 min at 350 until the surface is firm.
    3. oil top of crust and place under the broiler for 5 min.
    4. Top with your favorite toppings (tomato sauce, roasted red peppers, green olives, capers, onions, fresh garlic and plenty of cheese is one of my favorite combos) Bake 25 min at 350.
    5. cut into squares and serve with a green salad.

    I made this last week...should have taken a pic. Any topping combo works..Cajun shrimp, eggplant and ricotta, or traditional toppings
