    Default white-sauced pizza

    Description: I like mixing it up when it comes to pizza. Youngest loves a plain cheese pizza with red sauce. Son likes meat pizzas. Oldest child likes Buffalo chicken wing pizza. My wife and I like different ones. I topped this one with roasted red peppers, sliced grape tomatoes, chopped green olives and fresh basil. I also enjoy grilled eggplant, caramelized onions and sauteed artichoke hearts as toppings. Cajun shrimp also goes well on this. I keep things fairly low fat..I substitute olive oil for butter and 1% milk for whole milk when making the sauce. (edit- forgot it is better to add the chopped basil after the pizza is done cooking)
    Serving Size: 8 slices
    Time: 1/2 hour
    Difficulty: Easy

    Ingredients:
    1. 1 Pizza crust or shell
    2. 1 cup low fat milk
    3. 2 Tbl plus olive oil
    4. 1 Tbl chopped garlic
    5. 1/4 tsp cayenne pepper
    6. 1/2 cup grated Parmesan cheese
    7. 1 and 1/2 cup grated Fontina or Mozzarella

    8. Favorite toppings
    Preparation:
    1. Buy or make your favorite crust...whether home made or pre made or pizza shell. Tonight was a quicky...pizza shells.

    2. Pre heat oven to 500 degrees.
    Instructions:
    1. heat 2 tbl olive oil in sauce pan.
    2. saute 1 tbl chopped garlic in the oil.
    3. while garlic is sauteing, place 1 cup milk with 1/4 +/- tsp cayenne, in a microwave safe container and heat until very warm - 2 min will do.
    4. Once garlic is done add 2 tbl all-purpose flour to oil and slowly whisk in the heated milk until you get a thick, smooth white sauce.
    5. Remove the sauce from the heat and whisk in 1/2 cup Parmesan cheese. Allow to cool some.
    6. Lightly oil crust.
    7. spread white sauce over crust leaving 1/2 inch unsauced boarder.
    8. put 1.5 cups of grated Fontina or Mozzarella over the top and add your favorite toppings.
    9. Bake on a pizza stone for 8-10 min or until sauce is bubbly and starting to brown and crust is lightly browned

    I just got out of a long technical rehearsal for the production I am working on. I have only eaten some Lemon head candies today - LOL! This looks like heaven! I think all we have in the fridge is some spinach, olives, and feta, so I will probably have a salad, but that pizza looks so good!

    Lemon head candies? Do they still make those? Man, I love those things. mmmm...
    I have never seen those in Hawaii. . .

    That really sounds good, Ron! Might require my finding either a nonmetal whisk or a sauce pan that doesn't have a nonstick coating (which the metal would scratch up). I like the fact that it doesn't sound like it would be as unhealthy as alfredo sauce (which I DO love).

    Sounds like you have the makings of a pasta dish there, Bruce. Wouldn't take long to throw together.
