    Default Apfelpfannkuchen (apple pancakes)

    Description: Well it is apple picking season here in New York. Son went picking with his girlfriend and I have a 1/2 bushel of apples to deal with. This is an old family recipe that we all enjoy...hope you like it as well! I may also do sweet and sour red cabbage with apples next week.
    Serving Size: serves 4
    Difficulty: Easy

    Ingredients:
    1. 2/3 cup all-purpose flour
    2. 1/4 tsp salt
    3. 2 tsp sugar
    4. 2 cups sliced or chopped apples
    5. 1/2 tsp cinnamon
    6. 2 Tbl sugar
    7. 4 Tbl butter
    8. 4 large eggs
    9. 1/2 cup milk
    10. monounsaturated oil for frying (or butter as my grandmother did)
    Preparation:
    1. peel and core apples and slice or chop
    2. I use a 6" diameter fry pan to make this, making 4 big pancakes, one at a time.
    Instructions:
    1. sift together flour, 1/4 tsp salt and 2 tsp sugar
    2. Beat eggs and milk together and slowly mix in flour mixture beating until batter is smooth.
    3. Melt butter in a fry pan and saute apple mixture until apples are tender.
    4. Mix 2 Tbl sugar and the cinnamon together; toss with apples.
    5. add 2 tbl oil to 6" fry pan, heat and pour 1/4 inch batter into warmed pan, When batter is set, top with 1/4 of the apple mixture and top with more batter.
    6. Fry until browned on both sides.
    7. Keep warm while doing this 3 more times.

    I'm not much of a breakfast person, but I will give it a try for a 'dinner' sometime.

    the only problem with this recipe is that it tastes like MORE.
    I rarely make this for breakfast...Sunday brunch is more my speed.
