    Cool Pulled Tenderloin Pork Sandwich Pt.1

    Description: This recipe consists of two parts...first being the Pork Sandwich...the second being the Lemon Coleslaw top the sandwich....I'm serious when I say that this pulled pork blows all others out of the galaxy. Its that good. Double the recipe if you are into tasty leftover lunches for the following days.
    Serving Size: 4 Sandwiches
    Time: 3 1/2 hours ( including making and chilling coleslaw)
    Difficulty: Easy

    Ingredients:
    1. 1 tbsp olive oil
    2. 1 medium onion, chopped
    3. 1-5 garlic cloves, minced
    4. 2 tbsp cider vinegar
    5. 1/4 ketchup
    6. 2 tbsp ketchup-style chili sauce
    7. 1 tsp Worcestershire
    8. 1 tsp tabasco or rooster sauce ( I prefer the rooster)
    9. 3/4 cup water
    10. 1/2 teaspoon fresh ground salt
    11. 1/4 tsp fresh ground pepper
    12. 1 ( 3/4-lb) ( or 2 smaller tenderloins) pork tenderloin, halved
    13. 4 Fresh Artisan sandwich buns of your choice
    14. Lemon Coleslaw ***recipe is following***
    Preparation:
    1. Chop 1 medium onion
    2. Halve your pork tenderloins
    3. mince your garlic
    Instructions:
    1. Heat oil in a 3-4 quart saucepan over moderate heat.
    2. Add onion and garlic, cook, stirring, until golden ( 8 mins)
    3. Stir in remaining ingredients ( except pork, buns, and coleslaw)
    4. bring to simmer, cover, and cook for 5-10 mins
    5. Add pork, cover, and simmer, turning occasionally until tender
    6. (about 45 minutes)
    7. Pull pork apart in pan with forks or other handy kitchen tool
    8. continue to cook just enough to distribute sauce and keep hot
    9. Divide pork among bottoms of buns and top with some lemon
    10. coleslaw
