Spiced Pickled Pears

    Default Spiced Pickled Pears

    Description: Christmas Dinner is not ready until the pickled pears are on the table, this is a savory dish that is served with the meal.
    Serving Size: 8 to 12
    Time: 30 minutes
    Difficulty: Easy

    Ingredients:
    1. 3 pounds firm Bosc or Anjou pears – peeled, cored and quartered (firm pears work better than ripe pears)
    2. 1 tablespoon fresh lemon juice
    3. 3 cups sugar
    4. 2 cups cider vinegar
    5. 2-4 thin slices of lemon
    6. 1-2 tablespoons whole cloves
    7. 1-2 tablespoons allspice berries
    8. 2 pieces of dried stem ginger or 3 quarter size slices of fresh ginger
    9. 3-4 cinnamon sticks
    Preparation:
    1. peeling, coring and quartering pears
    Instructions:
    1. 1. Put the pears in a bowl with cold water to cover. Add the lemon juice to prevent discoloration.

    2. 2. In a large nonreactive saucepan, combine the sugar, vinegar, lemon slices, cloves, allspice, ginger, cinnamon and 3 cups of water. Bring to a boil over high heat, stirring to dissolve the sugar.

    3. 3. Drain the pears and add them to the spiced syrup. Bring to a boil, reduce the heat to moderate and simmer until the pears are tender but still firm, about 3 minutes.

    4. 4. Remove from the heat and let the pears macerate at room temperature in the syrup overnight. The next day, using a slotted spoon, transfer the pears to clean pint canning jars or a glass bowl. Boil the syrup over high heat until it registers 200F on a candy thermometer and is almost at the thread stage, about 35 minutes.

    5. 5. Pour the syrup over the pears. Let cool, then cover and refrigerate until ready to serve. (The pears will become a more beautiful color after 2 or 3 days in the syrup. They keep well in the refrigerator for up to a month.)

    Jason - they are, according to my family they are yummy with everything, they fight over them and carefully watch to make sure no one gets more than their "fair" share, and yes, these are adults. They make a nice sweet/sour savory flavor in your mouth, especially nice with rich meats.
