    Thumbs up Lemon Bars

    Description: One of my favorite flavors is lemon. I was searching for a new recipe to make and found this lemon bar recipe that looks really good. I decided to share it here. Enjoy!

    Serving Size: 36
    Time: 2 Hours 15 minutes (approx)
    Difficulty: Easy

    Ingredients:
    1. Crust
    2. 1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
    3. 1/2 cup butter or margarine (1 stick), softened
    4. Filling
    5. 4 eggs, slightly beaten
    6. 1 1/2 cups granulated sugar
    7. 1/4 cup Gold Medal® all-purpose flour
    8. 1 tablespoon grated lemon peel
    9. 1 teaspoon baking powder
    10. 1/2 teaspoon salt
    11. 1/4 cup fresh lemon juice (1 large lemon)
    12. Topping
    13. 2 tablespoons powdered sugar
    Preparation:
    1. Heat oven to 350°F. In large bowl, beat crust ingredients with electric mixer on low speed until crumbly. In bottom of ungreased 13x9-inch pan, press mixture evenly. Bake about 20 minutes or until light golden brown. Cool 10 minutes.
    Instructions:
    1. Meanwhile, in same large bowl, stir together filling ingredients except lemon juice. Stir in lemon juice. Pour mixture over warm crust.
    2. Bake 25 to 30 minutes longer or until top is light golden brown. Cool completely, about 1 hour. Sprinkle with powdered sugar. For bars, cut into 6 rows by 6 rows.

    3. To dress up the desert, use a bit of fresh mint after dusting with powdered sugar.

    I just found this wonderful "kitchen" area and to my delight one of the first recipes I see is for lemon bars. I love them, but have never made them. I think I will have to try tonight. thank you.

    I just found this 'new' kitchen area also! Thanks for posting these recipes - adds variety to life! I'm a lemon lover as well and these lemon bars look tasty - makes me pucker just thinking about them. I have a recipe similar to yours that has a crust that is basically shortbread (like shortbread cookies), but the sugar cookie mix sounds great also! I must try . . .
