    Thumbs up Black Bean Couscous

    Description: I'm making this for a little pot-luck later today and thought I would share it. This is quick and easy to make and everyone always loves it. I like to make it a little spicy, but if you don't like spicy, just skip the cayenne.

    Serving Size: 8 People
    Time: 30 Minutes
    Difficulty: Easy

    Ingredients:
    1. 1 cup uncooked couscous
    2. 1 1/4 cups chicken broth
    3. 3 tablespoons extra virgin olive oil
    4. 2 tablespoons fresh lime juice
    5. 1 teaspoon red wine vinegar
    6. 1/2 teaspoon ground cumin
    7. 8 green onions, chopped
    8. 1 red bell pepper, seeded and chopped
    9. 1/4 cup chopped fresh cilantro
    10. 1 cup frozen corn kernels, thawed
    11. 2 (15 ounce) cans black beans, drained
    12. 1/4 teaspoon cayenne pepper
    13. Sea Salt and pepper to taste
    Preparation:
    1. Bring chicken broth to a boil in a sauce pan and stir in the couscous. Cover the pot and remove from heat. Let stand for 5 minutes.
    2. In a large bowl, whisk together the olive oil, lime juice, vinegar and cumin. Add green onions, red pepper, cilantro, corn and beans and toss to coat.
    3. Fluff the couscous with a fork, breaking up any chunks. Add to the bowl and mix well.
    Instructions:
    1. Season with sea salt and pepper to taste. Refrigerate until ready to serve.

    How does it keep? Will it be good for a few days or is it something that needs to be eaten in one day? I was thinking of making some to take for lunch at work. Thanks,
