    Do the flowers smell like vanilla? How about if you were to pollinate one--can the beans be grown inside in a greenhouse?

    I think it would be a substance in the beans that provide the odor.

    I am guessing that if it can flower and be pollinated it should be able to mature the pod as well.

    I've read some articles here and there on the net.
    The flower itself is pollinated only by a special bee somewhere in Central America, so the growers pollinate them by hand.
    The flower only lasts for a day and must be pollinated when it is fully open in the afternoon (this could be a myth).
    The beans are harvested when they are ripe and still green, and then treated to become that brown pod we are all familiar with.
    The beans are then left to dry in the sun/ in an oven/ in a drying room just like tobacco. They are kept in the dark for some time until the aromas start to mature.

    You got it!

    Most vanilla is now grown in southeast asia, and there are huge processing plants. They do leave the pods to dry for quite a while after harvesting.
