Default sap on phal leaves

I have a couple phals and I have noticed that one suddenly has little sap dropplets on the bottom of the leaves. Is this normal and what causes it to happen?

I've always wondered, if you gathered up enough of that honeydew, whether it would taste good fermented....

A nice chilled, refreshing orchid beverage.
