I bet you could use graham cracker crust with lemon custard or filling, mixed into some whip cream in the bottom and this recipe over it to form a frozen lemon meringue-type pie

I had a recipe for Frozen Lemon Cream in a "Gourmet" cookbook that I no longer own. This recipe sounds like a close second. the Gourmet recipe was served in hollowed-out lemon shells--very pretty and very refreshing after a heavy meal. (Still wish I could find the original recipe.
