What can I say? You guys were right. A new small leaf started growing shortly after another small leaf had come out of the plant, and voila, I just got back from 9 days away and I"ve got a spike! So now my question is how long do phrag spikes take to bloom?

I think it officially ranges from "not too long" to "quite some time". I'm not very good at remembering spike development, but I would guess, from sheath to bud cracking, somewhere between 3-6 weeks.
