    Default Chicken Tortilla Soup

    Coarsly chop chicken breasts, cook in 10" pot until done.
    Once chicken is cooked, add chopped tomato and onion and saute for 2 min
    Add Chicken stock, stir for add'l 2 min
    Add salsa, taco seasoning, cook 5 min on medium heat
    Add a dash (1/4 C) heavy cream and 2 heaping Tsp sour cream, salt and pepper to taste, and chopped cilantro, stir in.
    Remove chicken from soup w/ tongs, but into large bowl and, using 2 forks, "pull" the chicken apart to make shredded chicken.
    Pour remaining soup mix into blender, blend on high 45 seconds. No chunks should be left.
    Return soup to pot, add chicken, cook for 2 min and serve!
    Serve soup in beautiful bowls topped with tortilla chips, a small dash of sour cream, shredded cheese and a small cilantro sprig for pretty presentation Enjoy!

    I too am going to give this a try...my kids love Mexican. I could see a few sliced black olives as garnish on the top as an alternate to the cilantro sprig

    I think you will really like it - once you get the hang of it, you can see that you just kinda "cook" it for a while, throw the ingredients in one by one - its a great recipe that doesn't require any finesse...which is good, bc the way I cook is quite chaotic!! And yeah, you can put whatever else you like in it - you could add beans to the soup, or olives on top...its just like a taco, you put on it what you like :-)

    Oh good, I'm glad you liked it!! Funny you posted this because I just made this soup on Monday!! I love it so much bc its so easy - and I actually started blending the soup in a blender so that its creamy instead of chunky, that way its really good too!!!

    Had this again - we use a 'boat motor' to churn it up a bit but still leave chunks. Oh my i'm salivating again!
