    Default Greek Salad

    Tear Romain Lettuce into bit-size pieces
    Peel the cucumber, divide in half, then slice thickly.
    Cut out and remove the stem of the tomatoes and cut into larger chunks.
    Peel the red onion and cut in half length ways, then slice.
    Dice the feta in bite-size cubes.
    Arrange the vegetables with the feta cheese in a big bowl and decorate with the pitted Kalamata Olives and Pepperoncini Peppers.
    Mix white vinegar and olive oil and pour over salad.
    Add the freshly ground black pepper to the top just before serving. Because the feta and olives are already salty, I do not add additional salt before serving.

    I love Greek salad. I use Kalamata olives, sometimes I add filets of anchovies and I use a yogurt dressing

    1 cup plain yogurt
    ½ cucumber, peeled and deseeded
    2 cloves minced garlic
    1 tsp olive oil

    Combine all in processor and refrigerate at least 4 hours.

    Bruce...this site is going to get me FAT, LOL...I had to go out tonight and buy some kalamata olives and cukes...I had the rest of the ingredients in the house. I made the yogurt dressing before leaving for the store...I also bought fresh lemons for the pie I will make next week, LOL.

    That sounds like a good variation of the common greek salad. Bear in mind that salads in greece are shared by all the people on the table. Also, we obviously don't call it "greek", here we call it "horiatiki salata" (rural salad).
    Here the most common ingredients are:
    1. Ripe (non gh grown) red tomatoes, usually one for each person, cut "kidonates". That's when you cut the tomatoes in half then each half in 4 crescent moon slices.
    2. One medium cucumber sliced in 0,5cm slices. Most don't peel it.
    3. One large red onion thinly sliced
    4. Olives (some like the kalamata variety, but there are so many to choose from, it depends on personal taste)
    5. Thick slice of Feta, which is placed whole on top of all the ingredients, drizzled with olive oil and seasoned with dry oregano
    6. A few sprigs of parsley, torn without the branches
    7. One green pepper, sliced

    Place all the ingredients in a bowl, pour olive oil and stop when you see it coming up between the veggies ( I know...you need plenty), season with salt (hold the pepper!). Toss the veggies around with your hands so they get all salty and oily and then place the whole slice of feta on top.

    However...the key ingredient is the bread. When there's a salad like that on the table (lol...almost every day) you get chunks of bread and dip them in the salad juices, fishing out the onions and maybe pieces of feta as well. And that is how you eat the salad- greek style.
