    Default vanilla

    I have three different varieties of vanilla with the beans growing...so far I have been drying them in the sun, but wondered if anyone knows more than I do about the different methods and exactly when to pick. I have asked the local growers, but seems rather hap hazard their methods...anyone??

    I think the seedpods need to ripen on the vine for 8 or 9 months. Then they need to be dried and cured for another 6 to 8 months once picked. There's a very good book, if you are interested in vanilla, called Vanilla: Travels in Search of the Ice Cream Orchid by Tim Ecott. It's a wonderful book and you'll learn all kinds of information about the vanilla trade, very interesting stuff.
