Every bulb has a number of "eyes", like a potato. They either produce a flower spike or new growth. This one was programmed to be a flower spike but never delivered. Once the bulb was removed, instead of putting up a growth it continued on as a flower spike. Its a rare occurance but not unheard of.

That is strange to see. Will the orchid continue on and now put out new growth?

    Cheers,

The name is King Arthur 'Holy Grail', a plant I had for years. I cut the spike off after the pic and taking it to a few club meetings. It never really got going though, very small slow growth & I think I through it out the next year.
