Limoncello

remove yellow rind, leaving the pith intact
place grated rind and grain alcohol into a glass jar and place in a cool dark place.
shake daily for 2 weeks.
On the 13th day, bring the water to a boil in a large saucepan. Add the sugar and remove from the heat, stirring until it is dissolved. Cover and let cool to room temperature.
the following day I strain the peel from the alcohol, discarding the peel.
add the alcohol to the sugar syrup and stir.
Place back into the large jar and again store it in a cool dark place for 3 weeks, shaking 1-2x per day.
After 3 weeks transfer the liquor into small bottles and store in the freezer.

That sounds really good, I wish i could have alcohol as I would love to try this, I could have the lemonade from the left over lemons!
