Do the hard cane dendrobium species require winter rest? I have a lot of keikis that almost have no roots, and winter is coming so I'm afraid that they will die during winter!

yes they do want a winter rest.Just enough water to prevent the ps shriveling badly. Also increase the light levels

I have one Dendrobium nobile. I have been keeping it in cold bright place and I have stopped watering it. Now i can see buds creating below the foliage. Should I bring it in warm place now or he will flower in cold?

    It will flower cold
Still with hold water, just give it enough to stop the canes shrivelling

Oh, I need to know this! When does the winter rest start, then? I need to rest my Den nobile, my Coelogyne cristata, and my Cuitlauzina pendula, but I don't know when to begin the regimen. They are indoors now, in a cool bright spot, but should I withhold the water starting now? And for how long?

the Dendrobium has several new growths that seem almost mature; the Coelogyne has two spikes that are shaping up; and the Cuitlauzina has a new growth that is --- growing but still kind of baby --

    Thank you. S

At this stage of development ,still keep them on the dry side.As I heard it described recently:- as you are watering, accidentally on purpose run the water quickly over the pot saying oops wasnt meant to do that.

These plants aren't read for full on water until there are new roots and growth.
