That is pretty much what a spike is going to do, go where it wants! You could possibly spike it up some but be careful as you don't want to break the spike, personally I would leave it as it as!

Hey everyone! Long time lurker, first time poster.
I mounted this Miltoniopsis Karl Lennart Gottling "Red Rim" less than a year ago (with a rhipsalis for good measure). He seems pretty happy and to my surprise, put out a spike!
The spike seems to be travelling downwards. Does anyone have any methods for guiding spikes on mounts?

I think you're right! Doesn't make much sense to try and tell a mounted plant what to do anyway, since it's a more natural look to begin with.
