Could someone please advise how I can administer my Dendrobium stem from drying out too much during the winter rest? It is shrivelling but I wonder whether it is a case of simply spraying it... if so, how do i ensure no water trickles into the leaf bases? I know i am not using the correct terms but I have forgotten everything now that I am asking. This is my first orchid.

In the fist place, a "winter rest" is more about "no fertilizer" than it is about "no water", and likely includes a bit of a reduction in temperature. Moistening the medium periodically to prevent dehydration is fine.
However, you should also keep in mind that not all dendrobiums require such treatment. I have never been big on dendrobiums, so am certainly no expert, but if that is a new growth emerging at the left of your image, you should not be withholding anything.
Ahhh. Thankyou so much. I Was concerned about the new shoots appearing just before the winter rest should happen but I really wanted flowers next year so cut down on water and it was my first orchid, gifted to me in October.. I shall now rehydrate it straight away and put this down to beginner experience, hoping I haven't killed it. I did print off some instructions on how to care for this particular orchid after a long search for its name and maybe I've read them wrongly. Thankyou so much. Will update soon.
