I usually worry about roots before I do leaves, and from the last two photos, I'd say your growing them way too dry. In my experience, phalaenopsis prefer a constantly moist, airy medium, and as coarse as that appears, does not need to dry out between waterings.
It's hard to say what the first images is showing, but the black areas in that third photo suggest it has been allowed to stand with water in the leaf axils, which should be avoided.
