Dendrobium pierardii, has now had a name change and is known as Dendrobium cucullatum .
This plant needs all water to be with-held from late autum through to when new growth has started. The first waterings will be mistings ,just to moisten the roots and new foliage. These are photos of a plant that I bought about 2 weeks ago.As can be seen in the 2nd photo a flower spike is developing in the bottom right corner.
Last but not leased is a link for further info.
