Ok, I'm not the chef here. Darwin is a wonderful cook and he's giving me these recipes to share with ya'll. My input is "This is GREAT!" Enjoy.

BEER RICE

1/2 cup onion chopped
1/2 cup bell pepper
1/2 cup melted butter
2 chicken bullion cubes
2 cups boiling water
1 cup raw rice
3/4 cup beer - you know what to do with the rest.
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon thyme

Saut'e onion and pepper in butter. Add bullion dissolved in water. Stir in everything else. Cover and simmer 40 minutes or till liquid is gone. Serves 5-6 (do not lift lid for at least 30 minutes.

This is good and different served with BBQ chicken.
