    Default Spaghetti Jambalaya

    This is a great recipe we got from my brother-in-law in south Luziana. It feeds about, oh....ummm... maybe 400 or so if you up the recipe. Sister and brother-in-law brought a kettle full after Hurricane Ivan and we fed de neighborfolk.

    Recipe Name: Spaghetti Jambalaya

    Ingredients:

    1 lb. #3 spaghetti
    2 lb. cubed pork (boston butt)
    2 lb. sausage
    2 lb. coarsley chopped onion
    1 chopped bell pepper
    2-3 ribs celery (minced)
    1 tsp minced garlic
    1 can golden mushroom soup
    1 can Franco American mushroom gravy
    1 can rotel
    salt pepper and cayenne to taste


    Instructions:


    Cook pork on med in black iron pot until white on all sides. Add sausage
    and cook until the sausage releases all of its oil. Remove all meat from pot, add
    onions to the drippings and cook until very brown. Add celery and bell pepper
    and cook until softened, Add meat, garlic and all canned goods, cook on low
    for 30 min. stirring often.

    Add 1 can chicken broth (start with one and adjust as needed) and bring to a slow boil
    Check Seasonings. Add spaghetti (carefull to seperate the noodles) and boil until slightly chewey.
    Cut fire, cover and let stand about 10 mins.


    Enjoy with French Bread, and Cold Beer.

    Rotel is a brand name for Diced Tomatoes and Green Chilies. Many use it when making cheese dip.
