    Default Lemon Meringue Pie

    1 baked pie shell
    1 1/2 cups sugar
    6 tablespoons cornstarch
    1 tablespoon flour
    2 1/4 cups water
    3 egg yolks (beaten)
    1 tablespoon butter
    1 teaspoon lemon peel (grated)
    6 tablespoons lemon juice (fresh squeezed - not concentrate)
    3 egg whites
    6 tablespoons sugar

    In a sauce pan, combine sugar, cornstarch, flour and salt. Gradually stir in boiling water. Cook and stir over medium heat until the mixture comes to a boil and is thick and clear. Stir a little of this mixture into the beaten egg yolks. Pour into mixture and cook a little longer (about 2 minutes). Remove from heat and add butter, lemon peel and juice. Pour into the pie shell.

    Next beat egg whites and 6 tablespoons of sugar in mixer. Spoon onto the pie and bake at 425 for about 5 minutes.

    Oh good timing my lemon bush will have a few on it , if I send one to you Diane and I will expect a 3rd and a third for you I am sure Lou will forgive us . Gin
