    Default Divine Divan

    We got this recipe from a friend on our football forum. It's easy, makes a lot, and the leftovers are great!

    Chicken Divan
    1 can cream of mushroom
    1 can cream of chicken
    1 can chicken broth
    1 cup mayonnaise
    1 tsp lemon juice
    1 large pkg (or 2 of the box pkgs) of chopped frozen Broccoli
    1.5 to 2 lbs boneless skinless chicken breast or tenderloins
    4-6 oz Shredded Mozzarella cheese (I like more cheese!)
    Bread crumbs (or toast 2 or 3 slices of bread – then crumble)
    1T Butter - melted

    Boil the chicken (add salt to taste) until cooked and tender. Chop or shred to bite size.

    Cook broccoli as instructed on package.

    Sauce: Blend cream of mushroom, cream of chicken, chicken broth, mayonnaise, and lemon juice until creamy and consistent throughout.

    Instructions:
    Place broccoli in bottom of casserole dish.

    Place chicken on top of broccoli.

    Pour ‘sauce’ over chicken and broccoli. You can add in layers if you want.

    Put mozzarella cheese in light layer on top. Put bread crumbs on top of cheese. Then spoon butter lightly over crumbs.

    Cook on 400 for 25-30 minutes until bubbly. Serve hot.

    That sounds great! We are making chicken tonight. I wish I would have seen this first. I am going to try this out next time. Thanks for sharing it! (I like lots of cheese too!)
