It actually may be a new leaf - they come out of the top of the crown, basically extending the crown. Congratulations! It sounds like you're doing a good job with the phals!

Some phals keiki freely when very healthy. New leaves come from the top or crown of the plant. A spike coming from the very center of the plant can mean it is in trouble though.

Good. I was hoping for new growth and not having any of them die.

I know I should start a new thread but...
So, then sprout coming out of your crown is probably a leaf. A keiki is when a skinny spike (like a normal flower spike on a Phal) comes out the middle.it will bloom on the spike but the plant will most likely die because the mother plant basically stop getting energy and no new leafs can come out.

I'm so glad that I found this site. I know next to nothing about orchids and I like the challenge of growing them. So far none have died but my den looks pretty sad. 3 Phals have a new leaf in the center.
