    Default apple muffin with spicy topping

    Description: Nice straight out of the ovven and pipeing hot with some cream.
    Time: 30 mins
    Difficulty: Easy

    Ingredients:
    1. -3 c flour
    2. -3/4 c sugar
    3. -2 eggs
    4. -1 1/2 c milk
    5. -2-3 fresh chopped apple (chop half, grate half, and use 3 if small)
    6. -100g melted butter
    7. -2 tbsp b powder
    8. -1-2 tsp ground ginger
    9. -1-2 tsp mixed spice
    10. -vanilla essence

    11. TOPPING
    12. -juice of one lemon OR 2 tbsp melted butter
    13. -1-2 tsp castor sugar
    14. -1-2 tsp mixed spice
    Preparation:
    1. preheat oven to 220 degrees c
    2. topping-mix the spice and castor sugar in a bowl.
    Instructions:
    1. sift flour b powder sugar and spices together in a bowl then make well in centre.
    2. .Beat eggs milk and vanilla together and add apple.
    3. fold into dry ingredients with butter.
    4. Put in muffin cases and bake 15-20 mins.
    5. WHEN FINISHED
    6. remove from oven and stand for 2-3 mins.
    7. Remove from cases (unless in patty pans) and brush tops with lemon juice/butter. Sprinkle tops with the spice/sugar mixture and enjoy!

    These sound yummy! I think I will try them with some cardamom in the spice mix.

    oh no dont worry its just my most secret ingredient (dont tell anyone-its fresh crushed cinnamon quills and fresh grated nutmeg)
