Hi and welcome to the forum. You will learn alot here I am sure from the friendliest people around. If it was my orchid I would repot it in bark mix. Moss can hold moisture too long and cause roots to rot. Your plant has a very poor root system and needs to produce new roots and recover. Personally I would forget the keikis this time and concentrate on saving the plant. Letting the keikies develope can take energy from the plant and make it harder for it to produce new healthy roots. It is way too early to plant the keikies and they will not develope by putting the stem in water. Keikies can take a long time to develope and need to have several roots over an inch long before they can be removed from the mother plant and be planted to grow on their own..
