Stake and tie the orchid and encourage the new growth to move toward the center of the pot. Usually the new growth will want to grow outside the pot for us. To get a large orchid plant. Repot triming only dead parts away and place the growing side toward the center of the pot with the oldest side toward the outside of the pot. Sometimes the plant is so large that it is growing in both directions so either way it will be fine. Just do not over pot. Cattleyas like to be potted tightly and drain freely. Never let them stay wet for too long.
