Does it happen very quickly? Like three days ago, it was growing like mad, but now it's just stopped.

Uhm, not sure there, as I don't watch that closely on a day by day basis. But slowing this time of year would be normal.

I'm not sure about the light, it varies from day to day, for instance, today the light is more of a glow, but phals like diffused light anyway, correct?

Yes, but keep in mind that what is plenty of light for a phal or a paph is NOT enough for a dend. Oh, and orchids do produce a clear, sweet sap.
