If that's a 2.5" rose (deep) pot, I personally would move up to a 3.25" aircone or similarly-sized square pot (McConkey makes the ones I have). These pots are about as deep as the 2.5" pot, and will give the roots enough room to expand. That's assuming the plant is rootbound in that 2.5" pot which, judging by the top growth, it probably is.

My personal preference is to move up in slow increments when it comes to pot size. I go from 3.25" square to 4" square to 5" round. You can always move it up again later on, and if the media is fresh, you can do so without disturbing the root mass. Just my $0.02

Jason, I don't have any more small aircone pots. I had a couple of 2" ones that went to my carniverous plants, but they would have been too small for this anyway. I'm going to order more supplies when I get paid next week, but want to get this potted before then. I don't have anyone close that sells them unfortunately. So, I'll likely have to pot in the smallest thing I have, which may be the leftover container. It is definitely more shallow than the 5" round though, which ought to be a good thing.

Heather, the plant certainly looks healthy enough; if you have a choice, repot it into something deeper rather than wider. If you have to go wider to get the depth, use a coarser medium so it doesn't stay too wet.

Hey, here's a couple pics of the roots, there are not a ton, but a good number of new ones. Then in the new pot. I think the pot is too big, but it does pass the wobble test. So, the question of the day is, can I re-pot again in like a week, when I get new smaller pots or should I just leave it alone?

Heather, I had no idea the root system was that small and that is not unusual for a hay. So, I would actually put it back in it's original pot and leave it in that pot for another year or so and then check the roots. Or you can custom make a see thru pot of similar size or slightly larger with holes and repot your hay, that way you can monitor the growth of the root system without unpotting and disturbing the roots.
