Lovely Phal. I'd not interfere by cutting or trimming the stem since the plant is blooming and healthy. Instead, I'd be curious as to what it's up to. It might keiki for you! Enjoy and watch!
Sounds like a happy plant to me...

Looks like a Sogo Vivien, which is a compact plant, but normally a very prolific bloomer.
Allow it to keep flowering it will eventually stop then cut the spike back as it will start showing development of shrivel
If you do any cuts, cut the entire spike off. This will allow the plants energy to go into making leaves and or additional roots. (Of course, it might actually just spike in another place too...)

I wouldn't trim it. Some of these new hybrids bloom like that and can keep blooming for many months. It's perfectly normal for them. Here's one mine that bloomed for over six months and finished with a spike almost four feet long.
