You could have zero roots and they would grow, as long as you still have something on the top half to spritz. They will absorb what they need through the leaves, and eventually put out roots. I spazed out a bit when I got my first one that needed a total haircut but it's still around nearly a year later, if I can get it to bloom then I did a good job.
