As far as the Encyclia goes, the solution to your problem would be a lot more light and air circulation. Encyclias are super tough and resiliant when given the right conditions, they like to be bone dry within a couple of days at the most. And all of my encyclias, including cordigera, get full South Florida sun from about 9am to about 1:30pm, and plenty of wind. They could probably take even more sun than that.
