I had a couple of flying squirrels on my land when I lived in North Carolina. Soo cute and they made the funniest noises, calling to each other.

Flying squirrels? I've never seen one...I've only seen running squirrels, climbing squirrels, and eating squirrels. lol

If it gets to hot for canning or if you just get "burnt out", we blanch and then freeze the tomatoes in freezer bags. Then you can make sauce or use them in soups in the winter when you want to heat up the house. I have heard of people who just cut them in half and throw them into the bags without blanching and removing the skins first. Supposedly the skins come off easily after freezing anyway. I haven't tried that yet.
What do you use all the peppers for?

I missed your post somehow. Sorry. We use the peppers for HOT Pepper Sauce. We pour it on red beens, or peas, and on spinach. Sometimes we just eat the peppers. We use it with cooking too. They also make great gifts for friends who did not can their own peppers.
