Plant health and a number of environmental factors can contribute to the color development, but the darkest color and largest area of color usually correlate with brighter light and cooler temperatures especially at night. There may be some difference between (imperfect) clones of the cultivar as well.
Both variations here are lovely, and if it isn't always the same you get a little surprise every time. Nothing wrong with that.
