Especially flowers that last and come back!

Yes, photos will better help us help you but it sounds like your flowers are just at the end of their cycle. Most phals can bloom again from the same spike if you cut it down between two nodes (those bumps along the spike) with a clean, sterilized blade. Sometimes you'll get a new spike from the node below your cut, and sometimes you won't. The flowers may also not last as long or there may not be as many if you let it flower from an old spike. I had one that was just prolific and kept pushing out spikes without doing much of anything, I was actually worried the plant would wear itself out haha. I've also had phals where I've cut the spike down and it doesn't do anything for a long time - but that's probably related to conditions and not cutting the spike.
In short (too late!) you won't hurt the plant by cutting back the spike, but don't expect a new set of flowers right away. Many times your plant will need a rest and to build energy for a new spike. You know it's still healthy if it's growing new roots and/or new leaves. Know what it's potted in and where you keep it will help us better advise you on how to best care for your plant so you get many more years of lovely blooms
