Is it possible to self my Dendrbium speciosum var penduculatum? or cross it with kingianum even? Or if i self it, will it do what some orchids do and terminate the whole spike or the plant itself?

You can self it, no problems. The spike and the plant will be fine.
If you cross to the kingi, you'll get a D. x delicatum. Most delicatums are very pale pink or even cream. It seems that D. speciosum var curvicaule is the best for letting colour through from the kingis, but the growth form and upright spikes from your pedunculatum would make for a neat compact D. x delicatum.
I gave up on it, i tried selfing between two flowers on the same spike and all the spikes terminated within 3 days, they had only been out for a week at the time! There were no noticable differences in temp or anything.
